Straw and Hay Parma style

  1. Melt 1 tbsp butter in a large skillet over medium heat

  2. Add 1/2 c finely chopped onion; cook 3 minutes

  3. Add 1 c chicken broth and 1/4 tsp each salt and pepper; cook until reduced to 1/2 c.

  4. Add 1 c heavy cream and boil until thickened, 5 minutes

  5. Stir in 1 c frozen peas; heat through

  6. Toss with 4 oz julienned prosciutto ham, 1/2 c grated Parmesan cheese and 1/2 lb each cooked plain and spinach fettucine
