Crisp Cheese Wafers

Ingredients

  • 1 stick (1/4 lb) butter

  • 1/2 lb grated sharp cheese

  • 1 1/2 c flour, sifted

  • Heavy pinch cayenne

  • Pepper

  • 1/2 tsp salt

Steps

  1. Cream softened cheese and room temperature butter with salt and pepper

  2. Work in sifted flour

  3. Make into two rolls and wrap in tin foil

  4. Store in ice box for as long as two weeks

  5. When needed, slice thin and bake in preheated 375F oven for 10-12 minutes.

  6. Watch as to not get too brown. May put in pecan half on top of some of them. Makes 6-8 dozen
