Helen's Fried Chicken
Ingredients
1 chicken, quartered or equivalent
Flour, salt and pepper (mix and toss chicken pieces in it)
1 cup of fat: combination of chicken fat, butter and oil
Steps
Heat fat on medium hot;
Brown chicken pieces skin side down until pretty; turn, cover and lower heat. Cook 15-20m until brown.
Turn again, crisp first side
Drain on paper towels
