Helen's Fried Chicken

Ingredients

  • 1 chicken, quartered or equivalent

  • Flour, salt and pepper (mix and toss chicken pieces in it)

  • 1 cup of fat: combination of chicken fat, butter and oil

Steps

  1. Heat fat on medium hot;

  2. Brown chicken pieces skin side down until pretty; turn, cover and lower heat. Cook 15-20m until brown.

  3. Turn again, crisp first side

  4. Drain on paper towels
