Poached Salmon
Ingredients
1 - 1 1/2 lb salmon fillets
1/2 c dry white wine
1/2 c water
a few thin slices of yellow onion and/or shallots, peeled and sliced thin
several sprigs of fresh dill or sprinkled dried dill
a spring of fresh parsley
Steps
Combine all but the fish in a pot; bring to a simmer
put fish skin side down on sauce, cover
cook for 5 minutes or longer if necessary
