Squash soup with chili sauce

This soup played an important role in the early days of the david/emily relationship. Takeaways: color is important, heat is good.

Ingredients

Sauce

  • 6 hot green chilis, stems removed, chopped

  • 2 Tbsp chopped fresh cilantro

Soup

  • 1 2lb chicken cut in pieces

  • 1 medium onion, coarsely chopped

  • 1/2 lb winter squash, peeled, cut in cubes

  • 1 small potato, peeled, cut in 2 inch cubes

  • 1 small orange flesh yam, peeled, cubed

  • 1/4 tsp turmeric

Steps

Sauce

  1. Simmer chilis, cilantro, 1/2 c water for 10 min

  2. Puree

Soup

  1. boil chicken, onions; remove, bone and shred chicken

  2. add water to broth to make 1 quart liquid

  3. boil remaining ingredients until done

  4. Add chicken and heat.

To serve

Place soup in bowls, put tablespoon of sauce in each bowl. The soup is orange, the sauce is green, it's pretty!
