Simple pan-baked chicken, potatoes & cherry tomatoes
Ingredients
1 3/4 lbs new potatoes, scrubbed
sea salt and freshly ground black pepper
6 boned chicken thighs, skin on (that's important -- alternatively bone a chicken)
Olive oil
2 boxes of cherry tomatoes (600g)
Bunch of fresh oregano, leaves picked.
1/4 cup of extra virgin olive oil
Red wine vinegar or lemon
Steps
Salt and pepper chicken and potatoes
Mix oregano, olive oil, vinegar-or-lemon together
Add chicken, potatoes, tomatoes, and sauce in a baking dish
Toss
Bake 40m at 400º F
