Simple pan-baked chicken, potatoes & cherry tomatoes

Ingredients

  • 1 3/4 lbs new potatoes, scrubbed

  • sea salt and freshly ground black pepper

  • 6 boned chicken thighs, skin on (that's important -- alternatively bone a chicken)

  • Olive oil

  • 2 boxes of cherry tomatoes (600g)

  • Bunch of fresh oregano, leaves picked.

  • 1/4 cup of extra virgin olive oil

  • Red wine vinegar or lemon

Steps

  • Salt and pepper chicken and potatoes

  • Mix oregano, olive oil, vinegar-or-lemon together

  • Add chicken, potatoes, tomatoes, and sauce in a baking dish

  • Toss

  • Bake 40m at 400º F
