Blueberry (or grape) chicken + pasta salad
Good summer lunch
Ingredients
8 oz rotini pasta
2 Tbsp tarragon white wine vinegar
1 tsp dijon mustard
1/2 tsp dried tarragon, crushed
1/4 tsp salt
1/4 tsp pepper
1 c fresh blueberries (or grapes)
1 cup shredded cooked chicken
1/2 cup sliced celery
1/2 cup chopped green peppers
1/4 cup chopped parsley
1/4 cup mayonnaise
1/4 cup yogurt
2 Tbsp toasted almond slices (optional)
Steps
Cook pasta, drain, add vinegar, mustard, tarragon, salt + pepper; toss
Cool completely; add remaining ingredients; mix well.
Serve on e.g. butter lettuce leaves
