Blueberry (or grape) chicken + pasta salad

Good summer lunch

Ingredients

  • 8 oz rotini pasta

  • 2 Tbsp tarragon white wine vinegar

  • 1 tsp dijon mustard

  • 1/2 tsp dried tarragon, crushed

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1 c fresh blueberries (or grapes)

  • 1 cup shredded cooked chicken

  • 1/2 cup sliced celery

  • 1/2 cup chopped green peppers

  • 1/4 cup chopped parsley

  • 1/4 cup mayonnaise

  • 1/4 cup yogurt

  • 2 Tbsp toasted almond slices (optional)

Steps

  • Cook pasta, drain, add vinegar, mustard, tarragon, salt + pepper; toss

  • Cool completely; add remaining ingredients; mix well.

  • Serve on e.g. butter lettuce leaves
