Beef & spinach stir-fry with oyster sauce

Ingredients

  • 1 lb flank steak

  • Fresh ground pepper

  • 2 tsp vegetable oil

  • 3 garlic cloves, thinly sliced

  • 1 10z bag cleaned baby spinach

  • 8 Tbsp oyster sauce (1/2 cup)

  • Sesame seeds (optional)

Steps

  • Slice steak against grain, 1/8 inch thick.

  • Season with pepper generously

  • In a wok, with high heat, add 1 tsp oil and heat until sizling. Add half of the garlic and cook until slightly browned, 2 minutes

  • Add spinach in small portions, cook until wilted, adding more as needed.

  • Drain liquids from spinach and remove spinach from the pan

  • Squeeze as much liquid from the spinach and place on paper towels

  • Add tsp of oil to wok; when hot add remaining garlic, cook until slightly browned

  • Add reserved meat and sauté quickly, stirring often, until meat is just browned (about 2 min)

  • Return spinach to pan; stir in oystersauce, season with pepper and heat through

  • Serve with rice and garnish with sesame seeds if desired.
