Beef & spinach stir-fry with oyster sauce
Ingredients
1 lb flank steak
Fresh ground pepper
2 tsp vegetable oil
3 garlic cloves, thinly sliced
1 10z bag cleaned baby spinach
8 Tbsp oyster sauce (1/2 cup)
Sesame seeds (optional)
Steps
Slice steak against grain, 1/8 inch thick.
Season with pepper generously
In a wok, with high heat, add 1 tsp oil and heat until sizling. Add half of the garlic and cook until slightly browned, 2 minutes
Add spinach in small portions, cook until wilted, adding more as needed.
Drain liquids from spinach and remove spinach from the pan
Squeeze as much liquid from the spinach and place on paper towels
Add tsp of oil to wok; when hot add remaining garlic, cook until slightly browned
Add reserved meat and sauté quickly, stirring often, until meat is just browned (about 2 min)
Return spinach to pan; stir in oystersauce, season with pepper and heat through
Serve with rice and garnish with sesame seeds if desired.
