Sichuan Noodles
Ingredients
12 oz dried udon or lo mein noodles
5 tablespoons soy sauce
3 tablespoons unseasoned rice vinegar
3 tablespoons packed dark brown sugar
1 tablespoon sesame oil
1/4 neutral oil
5 teaspoons sesame seeds
1 1/4 teaspoons red pepper flakes
12 scallions, white and g reen parts thinly sliced, reserve separately
4 fried eggs to serve, optional
Steps
Boil noodes until al dente, drain and rinse
Whisk together soy sauce, vinegar, sugar, and sesame oil in largish bowl
In oil, cook esame seeds and pepper flakes until fragrent, 3-5 minutes
Off heat, add scallion whites then add to soy sauce mixture
Add cooked noodles, scallion greens and toss
