Fish sticks

Halibut works really well

Ingredients

  • 1 kg halibut filet, cut into inch thick sticks [what's with the metric/imperial measures, is this canadian??]

  • 1 c flour for dredging

  • 2 c panko or regular breadcrumbs

  • 2 eggs

  • 1 tsp old bay seasoning

  • 2 tsp salt

  • Olive oil or canola oil for frying

Steps

  • Preheat oil to 340F in a high sided skillet

  • Remove halibut skin and cut into sticks. Season with a pinch of salt and a pinch of Old Bay

  • Place flour on a plate. In a bowl, whisk the eggs. On next plate place breadcrumbs seasoned with a pinch of salt and seasoning

  • Pick up fish and roll in flour until covered, roll it in the egg wash. Lift with other hand and place in breadcrumbs, roll until covered.

  • Place gently into the hot oil avoiding splashes. If oil covers the filet it will take about 3m. If not, turn the fish after a few minutes. When fiirm to the touch and golden brown, remove from oil and eat immediately.
