Fish sticks
Halibut works really well
Ingredients
1 kg halibut filet, cut into inch thick sticks [what's with the metric/imperial measures, is this canadian??]
1 c flour for dredging
2 c panko or regular breadcrumbs
2 eggs
1 tsp old bay seasoning
2 tsp salt
Olive oil or canola oil for frying
Steps
Preheat oil to 340F in a high sided skillet
Remove halibut skin and cut into sticks. Season with a pinch of salt and a pinch of Old Bay
Place flour on a plate. In a bowl, whisk the eggs. On next plate place breadcrumbs seasoned with a pinch of salt and seasoning
Pick up fish and roll in flour until covered, roll it in the egg wash. Lift with other hand and place in breadcrumbs, roll until covered.
Place gently into the hot oil avoiding splashes. If oil covers the filet it will take about 3m. If not, turn the fish after a few minutes. When fiirm to the touch and golden brown, remove from oil and eat immediately.
