Beef and coconut Satays
Ingredients
10 oz lean ground beef
1/2 c shredded sweetened coconut
1/2 tbsp soy sauce
1/2 tbsp molasses
2 tsp finely grated fresh ginger
1 tsp fresh lime juice
3/4 tsp salt
1/2 tsp turmeric
1/2 tsp fresh ground pepper
2 tbsp vegetable oil + more for grilling
Steps
in a bowl combine the beef, coconut, soy sauce, molasses, ginger, lime juice salt, turmeric, pepper and the 2 tbsp of oil. Mix with your hands to combine ingredients
With lightly moistened hands, roll 1 tbsp of the meat mixture around bamboo skewer in a 6" strip, about 1/3 inch thick. Repeat until all meat used up
Light a grill. When fire is hot, oil the grill. Arrange skewers at the edge so they don't burn adn cook the satays, turning often until meat is lightly charred and just cooked through, 3-4 minutes. Serve at once. (Or use a broiler)
